In excess of 350 volcanoes were active in the Eifel up until 10,000 years ago. Even today the cooling magma is still releasing carbonic acid, and every drop of rain that passes through the rock is thus carbonated.

It is the carbonic acid that allows the water to solubilize the precious minerals and trace elements from the dolomite rock. Gerolsteiner thus naturally contains a lot of calcium and magnesium and only a comparatively small amount of sodium and chloride.
